Our Story



Yo Daddio! BBQ started the way all great BBQ stories do—with smoke in the backyard, a whole lot of trial and error, and one unforgettable Christmas gift.
Mark’s BBQ journey fired up over a decade ago when his wife, Dawn, surprised him with his first smoker. He didn’t know it then, but that gift would launch a full-blown obsession with fire, meat, and the science behind what makes a brisket unforgettable. Mark started by learning the basics, smoking pork, ribs, brisket, and even homemade pastrami—nerding out on BBQ forums, swapping tips with friends, and fine-tuning his technique on everything from stick burners to ceramic grills and pellet smokers.
In March of 2022, the couple set out on what they now refer to as the ‘Great Brisket Tour’—a 48-hour, mouthwatering road trip through Texas that included stops at Pinkerton’s, Terry Black’s, Franklin, and Goldee’s Bar-B-Qs—the best of the best. That whirlwind journey solidified their love of Texas-style barbecue.
A few months later, Mark returned to Fort Worth for a hands-on brisket master class at Goldee’s. There, he learned directly from the pitmasters who helped inspire his journey—soaking up knowledge in the blazing Texas heat.
While Mark runs the pit, Dawn brings the balance. She’s got the palate, the instincts, and the flavor sense that ties everything together. As the creator of Yo Daddio’s signature sides—from savory casseroles to fresh, seasonal bites—she’s the reason your plate feels like a full-on experience. Dawn keeps things grounded, tasty, and always on point.
